Get ready for a delicious journey along the Silk Road in Dunhuang! Your culinary adventure starts with Shunzhang Huangmian (Shunzhang Yellow Noodles), a 100-year-old noodle shop whose hand-pulled noodles are tinted golden with local desert herbs. Pair them with the local specialty, Yanchiwan Lamb. They're raised on pristine grasslands where herds "drink glacial water and eat medicinal herbs", resulting in exceptionally tender, flavorful meat with no gamey taste.
Save room for dessert with the king of Dunhuang fruits: the Liguang apricot. Named after a legendary general, these golden gems burst with honey-like juice when in season around July. You can find them everywhere, fresh or dried.
